Review By Rachel Grunwell inspiredhealth.co.nz/what-the-fat-fats-in-sugars-out/This book is a collaboration of great minds and talents (heavy weights in the industry, if you like): a professor, dietitian and a chef. It's also heavy in weight - there are a lot of recipes and background information on how you go about eating certain foods and why. I'd call it a "good eating bible". There are endless tips and tricks and I buried my head in this for hours and still have a lot to learn and recipes to try out!!!There are recipes including soups to meals with side dishes and also snacks and drinks, but the authors talk about lifestyle, research on the latest science on food and there are even success weight-loss stories in this 300-page book.

From the Author Heard the one about the Fat Professor, the Whole-Food Dietitian and the Michelin-trained Chef who want to change the world? Nope, this is not a silly joke. Far from it. In fact, we hope this book provides some serious answers. We hope it is the beginning of a life-changing journey for many who have experienced inexplicable weight gain, the heartbreak of constant deprivation and yo-yo dieting, or worse, physical illness through poor nutrition. We believe it's time to change the game and it starts right here with your willingness to turn the page and consider the science of the low-carb, healthy-fat (LCHF) lifestyle. For decades, the brightest minds in the nutrition and science field have had fat pegged as the bad guy. As a result, many of us have been enslaved by an outdated food pyramid which has pushed us to eat carb-laden and processed food. As the evidence mounts against sugar and processed carbohydrates, it's time to flip the pyramid and break free of the fat phobia. Our eyes have been opened to better science and better success stories in practice with improved health outcomes for those who have always struggled. It may seem extraordinary, but doing pretty much the exact opposite of the past 50 years of nutrition advice might be the answer to improved health for many. Going from high-carb, low-fat to low-carb, healthy-fat (LCHF) has helped us, our families, our friends and our clients in a multitude of ways. In this practical guide, we present inspiring success stories, compelling evidence, and simple ways to "eat upside-down". Forget everything you were taught at school, flip the food pyramid on its head and start nourishing your body the way it was designed to be nourished. Faced by the science, we were willing to change our minds, and we now invite you to change yours. You have to be willing to think outside the square (or the pyramid, for that matter) to find what works for you, regardless of what the majority thinks. Our mission in writing this book is to help you. We want to change the world. Join us in flipping the food pyramid and eating real food.

About the Author Professor Grant Schofield Professor Grant Schofield is leading the wave of change in how we think about our health. Dubbed "the Fat Professor", he is at the forefront of challenging the widespread fat phobia that has pushed us to eat a diet full of processed, carb-laden food.   Dr Caryn Zinn Dr Caryn Zinn is a registered dietitian and sports nutritionist. Her master's degree was in the area of sports nutrition and her doctoral studies focused on how to achieve sustainable weight loss. Known as "The Whole-Food Dietitian" and a leader in this field, Caryn's mission is to influence the thinking and practice of the dietetic profession to understand the potential improved health benefits of LCHF nutrition.   Craig Rodger Craig Rodger is a classically trained chef who spent eight years cooking in fine-dining restaurants, including Michelin-starred establishments in his native Scotland. Diagnosed with pre-diabetes aged 28 (an occupational hazard, Craig says, for chefs tasting the highly refined cuisine designed to pleasure discerning gourmands), Craig felt compelled to research  and incorporate a different approach to eating and cooking. In 2014, Craig and his family opened LOOP, New Zealand's first restaurant to feature an LCHF approach to dining out.

By Amazon Customer I think this has to be the best low carb book on the market. The way it's laid out, with the practical advice about following a nutritious LCHF diet from the dietitician first, then the sumptuous recipes, then the in-depth discussion of the science, is unique and really helps make the information digestible. LCHF works for as long as you stick to it and works best for people to whom it becomes a way of life - there's nothing about the way of life laid out in this book that seems especially difficult or unusual once you understand the reasons for it, and the recipes certainly don't give the impression that you'd be depriving yourself of anything. It's great that the science section was made as up-to-date as possible and that Grant Schofield points out those places where the evidence for newer ideas and explanations for newer observations are still incomplete. This brings the reader into the picture, instead of talking down to them.I've been living the LCHF life for 5 years and I haven't lost weight, because I had no weight to lose. Instead I've lost acid reflux, headaches, joint pain, diarrhea, tinnitus, blurred vision, almost all colds and flus, insomnia, anxiety, and boredom. No doubt these are unbelievable claims, but they are not hard ones to test, and What The Fat? provides easy to follow instructions.

BUT there are very few recipes in the book and the the digial version suggest you buy the hard copy to get more recipes. Really can't understand why I should have to do this. I could have bought the hard copy but don't want to stockpile a bunch of paper!!

Its well laid out, has easy to use lists, easy to understand information with plenty of sensible case studies. If you have any interest in your own health, you must have this book.
